Our Dry aging process imparts a deeper, richer, and more tender cut of beef. This heavily marbled prime wagyu cut is the Rolls Royce of beef cuts. This cut comes from the rib section between the loin and the shoulder with the bone-in and is trimmed. This Rib-eye has a fine evenly distributed snowflake pattern of marbling running through the center that enhances tenderness and provides a rich, buttery flavor and juicy texture.
